  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1¼ cups  all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Peanut Butter Ice Cream:

  • 2 cups  heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Prepare the Peanut Butter Cookies:
    Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
    In a mixing bowl, combine the peanut butter, sugar, egg, and vanilla extract. Mix until well blended.
    Roll the dough into 1-inch balls and place them on the prepared baking sheet.
    Flatten each ball slightly with the back of a fork to create a crisscross pattern.
    Bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack.
  • Assemble the Ice Cream Sandwiches:
    Let the vanilla ice cream soften slightly at room temperature for about 5 minutes.
    Spread a generous amount of ice cream onto the flat side of one peanut butter cookie. Top with another cookie to create a sandwich.
    Roll the edges of the ice cream sandwich in mini Reese’s Pieces or crushed Reese’s Peanut Butter Cups.
    Place the assembled sandwiches on a baking sheet and freeze for at least 1 hour, or until firm.
