Mississippi Mud Ice Cream is a delightful frozen dessert that pays homage to the classic Mississippi Mud Pie. It combines rich layers of chocolate, gooey marshmallows, and crunchy nuts into a creamy and indulgent treat that’s sure to please any sweet tooth.
In a saucepan, combine the heavy cream, whole milk, sugar, cocoa powder, and salt. Heat the mixture over medium heat, stirring constantly, until it begins to steam but not boil.
In a separate bowl, whisk the egg yolks. Gradually whisk in about 1/2 cup of the hot cream mixture to temper the yolks.
Pour the tempered egg mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes). Do not boil.
Remove the saucepan from heat and stir in the vanilla extract. Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps.
Cover the bowl with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Chill the custard in the refrigerator for at least 4 hours or overnight until thoroughly chilled.
Once chilled, churn the custard in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
During the last minute of churning, add the mini marshmallows, chopped nuts, and chopped dark chocolate to the ice cream maker.
Transfer the churned ice cream to a freezer-safe container, layering it with extra marshmallows, nuts, and chocolate if desired. Freeze the ice cream for at least 4 hours or until firm before serving.
