  • Prepare the Crust:
    If using chocolate sandwich cookies, place them in a food processor and pulse until finely crushed. Alternatively, place them in a zip-top bag and crush with a rolling pin.
    In a mixing bowl, combine the cookie crumbs with melted butter until well combined and the mixture resembles wet sand.
  • Assemble the Base:
    Press the cookie crust mixture firmly into the bottom of a 9-inch springform pan or a rectangular baking dish, creating an even layer. Use the back of a spoon or a flat-bottomed glass to press the crust down firmly.
    Place the crust in the freezer for about 10-15 minutes to set while you prepare the ice cream layers.
  • Layer the Ice Cream:
    Allow the first flavor of ice cream to soften slightly at room temperature for easier spreading. Spread a layer of the softened ice cream evenly over the chilled cookie crust, using a spatula to smooth the surface.
    Repeat with additional layers of different ice cream flavors, alternating colors or flavors as desired. You can create as many layers as you like, depending on the depth of your pan.
  • Final Touches:
    Once all the ice cream layers are in place, cover the pan with plastic wrap or aluminum foil and return it to the freezer to set completely, at least 3-4 hours or overnight.
    Before serving, you can decorate the top of the ice cream cake with whipped cream, chocolate sauce, sprinkles, or fresh berries for added flair.
