1/2 cup granulated sugar (adjust according to sweetness preference)
1/4 cup shredded coconut (optional for added texture)
1teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons lime juice (optional for a hint of citrus)
Instructions
In a saucepan over medium heat, combine the coconut milk, granulated sugar, shredded coconut (if using), vanilla extract, and salt.
Stir the mixture until the sugar dissolves completely and the ingredients are well combined.
Remove the saucepan from heat and let the mixture cool to room temperature.
Once cooled, transfer the mixture to a blender or food processor. Add the lime juice if desired for a citrusy touch.
Blend the mixture until smooth and creamy.
Pour the blended mixture into a shallow container or ice cream maker.
If using an ice cream maker, churn the mixture according to the manufacturer’s instructions until it reaches a sorbet-like consistency.
If not using an ice cream maker, cover the container with a lid or plastic wrap and place it in the freezer.
Every 30 minutes, remove the container from the freezer and stir the sorbet mixture with a fork to break up any ice crystals. Repeat this process until the sorbet is firm but scoopable, typically about 3-4 hours.
Once the sorbet reaches the desired consistency, serve it in bowls or cones and enjoy your homemade coconut sorbet!
